Breakfast Tacos
Scrambled eggs or sunny side up are always a great choice for breakfast, but it is nice to spice it up sometimes and try something new. In my fridge I had some uncooked sausage that was not used from a barbecue this weekend. So with some tomatoes, onions and cheese, why not create a breakfast taco. Here is a great egg recipe that can be created with whatever you have in your kitchen! If you don’t have tomatoes use red or green peppers. Also you could add cilantro or black beans. This recipe is great for kids because they can build their own tacos. Ingredients: 6 eggs 3 tablespoons milk 2 tomatoes 1/2 sweet onion 1 sausage, removed from casing 1/3 cup cheese cubes (your choice) 9 corn tortillas Olive oil, for cooking Salt and pepper Optional toppings: Guacamole (recipe coming soon) Sour cream Salsa Hot sauce Instructions: Begin heating the oil in a pan on medium heat.
